I used avocado oil instead of vegetable oil, and also added about 1 tbsp of grated fresh ginger to the wet mix. I also added 2 bags of chai tea and what looked like a fun amount of nutmeg to the dry mix before folding. Made a basic icing sugar glaze since I didn’t have cream cheese on hand but turned out to be just the right amount of sweet for my taste. Even though I live at a very high altitude I didn’t have to adjust the baking time by very much.
Probably one of my favourite recipes I’ve ever made and a great way to use up carrots and apples that are looking at retirement. I get a LOT of giant carrots in my weekly no-waste local produce subscription box. Thank you for sharing this 😋 I will probably be making this not only for myself regularly but for every potluck, baby shower, and what-have-you until the end of time.
